Naan Pizza with Quick Homemade Sauce


This pizza is ridiculous. It's simple to make and the garlicy sauce is fresh and addicting. My sister Erin originally turned me on to the process for making the sauce and she typically uses Pillbury pre-made pizza dough. I usually make it with that, but on this attempt, the dough came out of the packaging with holes throughout it and just wasn't salvageable so I had to improvise. Luckily, the naan version came out even crispier than the original and from then on I've made it this way. You can find pre-made Naan near the pita bread in the deli/produce section of most grocery stores. It's a bread normally served with Indian food, but serves as a great base for pizza too.

Ingredients: 1 1/2 tomatoes, seeded & cut into large chunks, then patted dry 6-7 basil leaves 3 cloves of garlic, pressed 1 TBS olive oil 1 TBS white cornmeal Packaged Naan breads (2 pieces) 1 ball fresh mozzarella, cut into 1/8 - 1/4" slices Fresh grated Parmesan cheese Kosher or Sea salt

Directions:

  1. Preheat oven to 400

  2. Combine first three ingredients in a food processor and pulse until sauce is combined (some tomato chunks may remain)

  3. Line cookie sheet with foil & brush foil with olive oil.

  4. Sprinkle corn meal over oil & place naan bread on sheet, pressing slightly into the cornmeal

  5. Cover naan with sauce, then place mozzarella slices over sauce

  6. Bake for 15 minutes

  7. When pizza comes out of oven, grate fresh parmesan over pizza and allow to melt.

  8. Sprinkle a pinch of kosher salt over each pizza (be very light with the salt, it doesn't need much - if you don't have this type of salt, skip this step)
