Ground Beef Ramen Stir Fry




How have I never thought of this before?!? I've always loved dressing up cheap store ramen, but this takes it to a whole new level. The vibrant ginger combines with the salty oyster sauce and spicy Sriracha to create a delicious stir fry punctuated with ground beef, veggies, sesame, and green onion. It's mouthwateringly good the first day and the leftovers are particularly fantastic if you pan fry them in sesame oil to get a little crisp on the day-2 noodles. This will be a weeknight go-to in our house.


Ingredients:


3 packages Ramen Noodles, season packages removed

1 1/2 TBS Sesame Oil

1/2 Onion, diced

1 Carrot, small dice

1 1/2 cups Broccoli Florets, small chop

3-4 cloves Garlic, minced

1-2 TBS Fresh Ginger, minced

2/3 cup Beef Broth

1 TBS Rice Wine Vinegar

1/2 cup Oyster Sauce

2 tsp Sriracha or Sambal Olek

2 tsp Brown Sugar

Salt

2 Green Onions, sliced

2 tsp Sesame Seeds, toasted



Directions:

  1. Cook Ramen noodles until almost done, 2-2.5 mins, drain, run under cold water, and set aside

  2. Toast Sesame Seeds in toaster oven or small fry pan and set aside

  3. In a large skillet, heat sesame oil over medium-high, and cook Beef & Onion until beef is mostly browned

  4. When beef is just about cooked through, add Carrots & toss, allowing beef to crisp up a bit

  5. Add Garlic & Ginger and toss 1 min until fragrant

  6. Add Broccoli & toss

  7. In a separate bowl, mix Beef Broth, Rice Vinegar, Oyster Sauce, Hot Sauce, & Brown Sugar together

  8. Pour liquid mixture over beef & veggies & toss, scraping up any bits

  9. Add noodles & toss, continuing to stir fry until noodles are slightly charred

  10. Remove from heat, salt to taste, and stir in Green Onions & Toasted Sesame Seeds. Enjoy!
