Soy-Marinated Flank Steak


  • This isn't the greatest picture of this steak, but I can almost guarantee it will be the most delicious flank steak you've ever tasted. It requires marinating overnight, but for the depth of flavor that comes out, it's totally worth it. Flank is one of the healthier cuts of beef because it's so lean, but you will feel like you're cheating because of the sweet, salty, and even umami indulgence of flavor. This recipe is great paired with potatoes (or parsnip puree as shown) and veggies on a cold winter night, or on top of a simple green salad for a light summer dinner. It also makes for fantastic leftovers, either reheated, or cold.

Ingredients:

  • 3 cloves garlic, minced or pressed

  • 1/3 cup soy sauce

  • 1/3 cup honey

  • 1/4 cup hoisin sauce

  • 1/4 cup white vinegar

  • 2 flank steaks

Directions:

  1. In a large bowl, whisk together first five ingredients

  2. Score meat on both sides, place in ziplock bag and pour marinade over them

  3. Seal ziplock and put on a plate in the fridge for 8 hours or overnight (can marinate for up to 3 days)

  4. Turn steaks halfway through marinating

  5. Remove steaks from ziplocks and discard remaining marinade

  6. Heat grill to medium and grill the beef, 7 minutes on each side

  7. Let rest for 5 minutes after grilling, then slice across the grain and serve
