Spiced Sautéed Chickpeas



When I first cooked this, I made it to add to a jar of Indian Tikka Masala simmer sauce from the store. The chickpeas ended up so good, I saved half of them to eat without the sauce, and preferred them standalone. They can be used as a side, a snack, or as part of a green salad or ancient grain salad with some fresh herbs and feta. They're delicious cold or hot, with the sweet, buttery onions complimenting the warm spices and tender chickpeas till you can't stop eating and every last yummy bit is consumed.


Ingredients:

  1. 1/2 onion, sliced thin

  2. 3 TBS butter

  3. 1 can chickpeas, drained & rinsed

  4. 1 tsp cumin

  5. 1 tsp coriander

  6. 1/2 tsp kosher salt

Directions:

  1. Sauté the Onions in Butter until beginning to brown (about 7 mins)

  2. Add chickpeas & seasoning and sauté another 5 mins
