Oven Roasted Broccoli

I made this one up on the fly a long time ago, and recently at the holidays my sister made a similar version that was equally delicious. Oven roasting the broccoli at a high temperature gives you crunchy, caramelized broccoli florets with a little heat from the red pepper, a little tang from the dry mustard. The crunchy salty goodness of toasted parmesan brings it all together. I couldn't stop eating this, and soon Matt was eating it like chips!


2 heads broccoli florets

2-3 TBS olive oil

1 1/2 tsp ground mustard

1/2 tsp kosher salt

1/4 - 1/2 tsp crushed red pepper

3 TBS parmesan cheese


  1. Preheat oven to 450

  2. In large bowl, toss broccoli with all ingredients

  3. Spread broccoli on cookie sheet

  4. Bake for 20-25 mins to desired crispness

  5. Serve w additional parmesan if desired
