Roasted Brussels Sprouts with (optional) Bacon


I never had Brussels sprouts when I was a kid. My mom absolutely hated them, and from the sound of them I didn't blame her. That was before either of us had them cooked like this. Boiled, Brussels are somewhat mushy and bland. But roasted...they're taken to a whole new level. Especially with bacon (duh). They become salty, crispy crunchy bombs of delicious.


Ingredients:

1 LB Brussels sprouts 2 TBS olive oil Kosher salt & pepper 2-3 strips of bacon, thinly sliced

Directions:

  1. Preheat oven to 425

  2. Chop off brown ends of Brussels sprouts & remove any yellow leaves. Cut in half or quarters

  3. Put sprouts in a bowl & toss with olive oil

  4. Season with salt & pepper

  5. Place Brussels sprouts & chopped bacon on cookie sheet

  6. Bake 20 mins depending on how much you like them cooked. I like to get the dark, crunchy caramelization, but still have a bit of crunch to them. The bacon should be crispy
